摘要 <p>PROBLEM TO BE SOLVED: To obtain an acetic acid bacterium transformed to improve sucrose- assimilability and capable of economically producing a cellulosic substance useful for keeping viscosity of a food, a cosmetic and a coating material, etc., from an inexpensive raw material at a high yield. SOLUTION: This new acetic acid bacterium is a cellulose-producing bacterium transformed to improve a sucrose-assimilability by another species of a levan sucrase gene or a mutation enzyme gene of the enzyme, an extracellular invertase gene or a secretomotory accelerating gene, etc., and can economically give a cellulosic substance useful for keeping of viscosity of a food, a cosmetic and a coating material, etc., for strengthening of food raw material dough, for keeping of moisture, as a low calorie additive and an emulsion stabilizing auxiliary, etc., from a sucrose as an inexpensive glycogen. The acetic acid bacterium is obtained by introducing a levan sucrase gene derived from Bacillus subtilis or an invertase gene derived from Zymomonas mobilis, etc., into Acetovacter xylinum, etc., as an acetic acid bacterium.</p>
