Process for the manufacture of natural dyes comprising the stages of: providing a compound with hydroxycarotenoids and/or ketocarotenoids as well as fatty plant and/or animal extracts, plant and/or animal extracts having a fat content and their mixtures, saponification of esters of the compound, yielding a crude saponification product which contains hydroxycarotenoids and/or ketocarotenoids in the free alcoholic form, and reduction of the pH of the said crude saponification product by means of an acidifier. The product is subjected to a stage of mixing with excipients, or, after separation of the organic phase, a second solvent is added to this organic phase bringing about the selective precipitation of a fraction enriched in hydroxy/ketocarotenoids.
