PROBLEM TO BE SOLVED: To provide the subject rice cake cookable without causing the peeling of scorch, etc., and giving a cooked product having soft palatability by sealing a roast rice cake holding a scorch mark integrally bonded to the core part and having a water content of the surface layer close to that of the core part. SOLUTION: A roast rice cake 2 composed of a surface layer 5 having a scorch mark 4 and a core part 6 integrally bonded with the scorch mark 4 is sealed in a packaging material made of a synthetic resin. When the roast rice cake is trisected in the direction of thickness into surface layers 2a and a core part 2b, the water content ratio of the surface layer 2a to the core part 2b is 98-103%. The objective rice cake can be produced by supplying water to the surface of a rice cake and roasting the cake to form a scorch mark on the surface or roasting a rice cake and supplying water to the roast rice cake, cooling the roast cake by leaving in a low-temperature environment, sealing with a packaging material made of a synthetic resin and heating the packaged roast rice cake to integrate the scorch mark to the core part. The thickness of the top and the reverse surface layers 5 is 5-8% each and 10-15% in total based on the total thickness of the rice cake 2. |
