FOOD ADDITIVE COMPOSED OF POLYGLYCEROL MONOFATTY ACID ESTER

PROBLEM TO BE SOLVED: To obtain a food additive composed of a polyglycerol monofatty acid ester containing a prescribed amount of a specific monofatty acid ester, having high purity, exhibiting excellent surface tension, dispersibility, frothing performance and emulsion stability and useful e.g. as an emulsifier for an oil and fat composition for bakery and confectionery. SOLUTION: This food additive is composed of a polyglycerol monofatty acid ester containing a monofatty acid ester of the formula (R is a 6-21C alkyl, alkenyl or hydroxyl-substituted alkyl; (n) is >=4) in an amount of >=70% in terms of the peak area ratio measured by separating the fraction by a high- performance liquid chromatography with a silica gel column bonded with octadecylsilyl group and using an alcoholic solvent and/or distilled water as an eluting solution and determining the peak with an ultraviolet absorption detector. The monofatty acid ester can be produced by reacting a fatty acid of the formula RCOOH with glycidol in the presence of a phosphoric acid-type acidic catalyst (e.g. phosphoric acid). A polyglycerol monofatty acid ester containing the monofatty acid ester is preferably used as a food additive.
