VACUUM STEAM WAND FOR SANITIZING A CARCASS

A vacuum steam wand for sanitizing a carcass includes a housing having a handle (10) and a thermally conductive vacuum head (12) with steam passages (14) within that maintain the temperature of the vacuum head above a desired sanitizing temperature. The vacuum head (12) includes a wall (42) defining a vacuum region (44) that is surrounded at the interior and exterior perimeter by multiple closely spaced steam nozzles (50, 52) that continuously wash the wall, spray the carcass to loosen contaminants and maintain the temperature of the wall at or above the sanitizing temperature. A thermometer (26) for monitoring temperature is provided and portions of the tool are coated with a nonstick coating. The wall (42) has a lowered height portion (46) which improves the vacuum lifting action and allows the inner surface to act as a scraper to prevent contaminants from collecting on the outer wall surface.
