摘要 Steam heated baking oven includes a multi-level baking chamber into which closed pipes extend from a flame heat source in an adjacent chamber, transferring process heat. The oven is a continual-process oven, in which transport assemblies containing food move back-and-forth as required via heat locks, expose the food to steam heat, and are then moved after baking to another chamber where the food is removed via a heat and air lock. The oven chamber is sub-divided into smaller chambers by folding hatches which may be opened and closed. The smaller chambers include side-doors through which baked products may be removed. The transport assemblies and their lower sections on which the unbaked products are placed, are located at the base of the chambers outside of the heated zone. The folding hatches can be telescoped back-and-forth within the main chamber. The baking oven includes a forced hot air circulation system.
