Particles, especially beads, (micro)capsules or (micro)spheres, comprise: (a) an esterified polysaccharide, (b) a polyamine, and (c) a gellable polysaccharide if neither (a) nor (b) are gelled under the operating conditions. The particle has on the surface a membrane formed by the product of the transacylation reaction, with formation of covalent amide bonds, between (a) and (b) in the body of a gel. The particles are dried and contain (partly) in their mass a living material, e.g. a microorganism, preferably a bio-transformation (e.g. fermentation) organism, e.g. yeasts.
