PROBLEM TO BE SOLVED: To provide a production process for an instant fired noodle of a reduced oil content. SOLUTION: Wheat flour, water and other usual ingredients are mixed to prepare the dough for noodle, extended into sheets and cut into lines. The noodles are steamed to convert the starch to glue, the steamed noodles are cut into cake and the cake is dried at 110-220 deg.C within 5 minutes until the water content reduces less than 30wt.%, and the dried noodles are fried. |
