PROBLEM TO BE SOLVED: To obtain the subject extract excellent in solubility in water and antioxidant effect, and usable as a water-soluble antioxidant for foods, medicines, cosmetics, etc., by making an enzyme act on a Myricaceae plant extract in the presence of a galactose residue transfer source. SOLUTION: (C) An enzyme having galactose residue transfer activity (e.g.β-D-galactoside galactohydrase) is made to act on (A) a Myricaceae plant extract having antioxidant effect (for example, obtained by the following process: a ground product of the bark, rhizome, twigs or leaves of Myrica rubra or gale is subjected to extraction with an organic solvent such as a 1-5C aliphatic alcohol or 3-5C carbonyl compound followed by removing water-soluble substances such as condensed type tannin, catechins and saccharides from the extracted product) in the presence of (B) a galactose residue transfer source (e.g. lactose, galactooligosaccharide) to effect transferring galactose residues to the component A.
