PROBLEM TO BE SOLVED: To obtain a salmon roe-like artificial fish egg excellent in texture and shape retention, capable of adjusting the hardness of a coated layer, by coating an inner material layer composed of a sol or a gel with a gel of a specific water content in prescribed thickness to form the coated layer. SOLUTION: A double pipe nozzle made by combining two nozzles respectively having 1.0mm inner diameter and 5.0mm inner diameter is used. A salad oil mixed with an orange red coloring matter and a fish-smell flavor is released from the nozzle having 1.0mm inner diameter as an oily substance O contained in a layer to be included and a fluid sol comprising 1.2% carrageenan, 0.4% locust bean gun and 0.3% calcium chloride colored in light yellowish orange with a natural coloring matter is delivered from the nozzle having 5.0mm inner diameter as a sol for the layer to be included to form particles comprising the solid oil O sealed in the sol S for the layer to be included. The particles are immersed in 0.9% solution of sodium alginate as a covering sol, are taken out, treated with 3% calcium chloride and a coating gel G is formed to give the objective artificial fish egg. |
