PROBLEM TO BE SOLVED: To easily obtain a glucoside such as a compound having alcoholic or phenolic hydroxyl group, a flavonoid-analog compound, etc., by reacting a compound having hydroxyl group and a glucan having an α-1,4 bond with a specific α-glucosidase. SOLUTION: A glucoside is produced by reacting a compound having hydroxyl group (a sugar acceptor) and a glucan having an α-1,4 bond (a sugar donor) with an α-glucosidase. The glucoside can be produced with an easy operation at a low cost by using an a glucosidase originated from Bacillus stearothermophilus UK563 strain (FERM P-7275), etc., maltose, amylose, etc., as the sugar donor and a compound having alcoholic hydroxyl group, a compound having phenolic hydroxyl group, a flavonoid-analog compound, etc., as the sugar acceptor. |
