PROBLEM TO BE SOLVED: To rapidly treat waste water containing oils and fats in high concn. or oils and fats themselves by bringing bacteria belonging to the genus Burkholderia capable of aerobically metabolizing oils and fats at high temp. into contact with oils and fats. SOLUTION: When animal and vegetable oils and fats in waste water discharged from a food processing factory or a restaurant are decomposed and assimilated to be metabolized, bacteria belonging to the genus Burkholderia and capable of aerobically metabolizing oils and fats at a high temp. are brought into contact with oils and fats contained in waste water at 50 deg.C or higher. In this treatment, an oils and fats removing apparatus 4 having a packed bed of a carrier on which a strain belonging to the genus Burkholderia being oils and fats metabolizing bacteria is immobilized is used. That is, oils and fats-containing waste water 1 is sent to the oils and fats removing apparatus 4 to catch oils and fats by an immobilized carrier 5. By injecting air 6 into the apparatus 4, oils and fats caught by bacteria on the carrier are aerobically metabolized.
