PROBLEM TO BE SOLVED: To obtain a stabilized vitamin C composition containing an active anti-oxidation substance contained in a green leaf component of a green plant. SOLUTION: This composition is obtained by compounding 2''-O-glucolsyl- isovitexine of the structure of the formula in an amount of 0.01-5mol, preferably 0.05-2mol based on 1mol of vitamin C in terms of the compound of the formula. The compound of the formula is obtained as follows. A green juice is prepared by squeezing a green plant belonging to a group of wheat such as barley, preferably fresh stalks and/or leaves of a voung plant harvested before maturity, by a juicer, etc. This juice is dried to obtain powdery material. The green juice or the powder is extracted with water or n-hexane. Water soluble opart or a part substantially insoluble in n-hexance is recovered. The water-soluble part or the n-hexane insoluble part is extatctid with a hydrated alcohol containing 0-80% water, and the component soluble in the hydratecd alcohol is recevered follwed by recrystallization and putification to obtain an active anti-oxidation compound of the formula. The substance can be used for foods such as vairious drinks, sweet and candies, medicines quasi-drugs, etc. |
