A rapid cooling installation consists of a water cooler with a series of tubes (20) preferably extending parallel to the length wise axis of a conveyor, cooling the water to a temp. of between 0 - 3 deg C. and preferably between 0 - 1.5 deg C., e.g. close to 0.5 - 1.0 deg C. The water is fed to the cooler through a perforated metal sheet (12) which is preferably flat and horizontal, and after passing through the fruit or vegetables as they are carried on a perforated conveyor, is recuperated in a chamber (7) with a filter and a temp. (7) for recirculation.
