Process consisting in the preparation of a sofrito (lightly fried mixture of oil, onion, garlic and tomato) or base and then, actually inside the paellera (paella pan) lightly frying the paella components except for the rice so that, once this operation has been completed, the first sofrito or base is then added and then all these ingredients are quick-frozen (deep-frozen) within the actual paellera which thus contains all the components for the paella except for the rice, which is provided separately, uncooked. |
