摘要 FIELD: food industry; baking industry. SUBSTANCE: method involves mixing vegetable oil with water and an emulsifying agent to produce emulsion for oiling baking molds. The emulsifying agent is aqueous solution of alkali (0.01-0.05%). The amount of the emulsifying agent added to the mixture is 10-50 ml per liter of emulsion, then the mixture is exposed to ultrasonic oscillations. EFFECT: lower energy consumption; improved organoleptic properties of bread.
