PROBLEM TO BE SOLVED: To efficiently obtain the subject compound useful for producing seasonings, medicines and as an intermediate material for these products by making microorganism-derived acid phosphatase act on nucleoside and a donor of phosphoric acid such as polyphosphoric acid under condition of an acidic pH value, and collecting the reaction product. SOLUTION: This compound is obtained by making acid phosphatase derived from microorganism variants (Morganella morgani NCIMB 10466, etc.) which reduce nucleotidase activity act on a nucleoside (e.g. inosine) and phosphoric acid donor (e.g. sodium pyrophosphate), such as a polyphosphoric acid (salt), phenylphosphoric acid (salt), or carbamylphosphoric acid (salt) under condition of pH 3.0-5.5 to form a nucleoside-5'-phosphote (e.g. 5'-inosinic acid); followed by centrifuging the precipitation after stopping the reaction by addition of 2N hydrochloric acid, and separating the product by using, e.g. an adsorptive synthetic resin, thus effectively obtaining the objective compound, nucleoside-5'- phosphate useful for seasonings, medicines and as an intermediate material for seasonings and medicines. |
