PROBLEM TO BE SOLVED: To obtain the subject mix comprising an emulsifying agent, a protein, a saccharide, etc., by emulsifying an oil phase with a water phase, adjusting the concentration of the saccharide, etc., in the water phase to a specific value or higher and the water amount in the water phase to a specific amount or smaller, excellent in handleability and shelf stability without damaging excellent texture, shape retention and flavor. SOLUTION: This pasty foamable cream mix comprises an emulsifying agent, a protein, a saccharide and/or a sugaralcohol as essential components. The pasty foamable cream mix has >=60wt.% calculated as a solid content of the saccharide and/or the sugaralcohol concentration in the water phase and is obtained by adjusting the water content in the water phase to <=35wt.% and emulsifying the oil phase with the water phase. |
