Fruotose and glucose are prepared from sucrose in a process in which the sucrose is firstly inverted under mild conditions, the pure inert sugar solution freed from mineral acids, if necessary after separation of crystallized glucose, and evaporated under mild conditions, whereupon the invert sugar concentrate, if necessary after separation of crystallized glucose, is treated with a lower alcohol e.g. methanol, and from this solution, if necessary after removal of the residual water down to about 1%, the two sugars are crystallized alternately after inoculation. The inversion may be carried out in 20- 75% (preferably 60%) solution, with an acid content of 0À001-0À05 equivalent of mineral acid, preferably 0À01 equivalent of HC1 per litre of solution at a temperature of 50-120‹ C., preferably at 80‹ C., or with a strongly acid cation exchanger and inversion is stopped by cooling and neutralization when minimum optical rotation is obtained. The invert sugar solution may be evaporated in a thin layer evaporator at a temperature less than 120‹ C. and the water may be removed from the invert sugar solution by treatment of the solution with a countercurrent of dry solvent vapour. The mother solution after crystallization may be rehydrolysed and the hydrolysate again crystallized. This hydrolysate or the original invert sugar solution may be crystallized to yield a mixed crystallisate of fructose and glucose which may be separated as before while the mother liquor from this crystallization is rehydpolysed.</p> |
