PURPOSE: To provide a method for producing boiled noodles, capable of carrying out prevention of fixing between noodle strips of boiled noodles and suppression of aging of the noodles due to passage of time by delivery and sale after production of boiled noodles, e. g. packed in a package or a bag. CONSTITUTION: A calcium-replaced solution of a water-soluble polymer obtained by controlling blend and concentration of the water soluble polymer and calcium to water is prepared and the replaced solution 3 is attached to noodle ball of noodles to form a film from the replaced solution 3 attached to each noodle long strip. |
