摘要 <p>The method for eliminating by pressing the whey contained in curd (3) located in a micro-perforated cheese mould (2) consists of placing the cheese mould in a sealed enclosure (1). Two pressing cycles are made, each comprising a first phase in which a pressure is exerted on the curd contained in the mould, and a depression created in the enclosure. In the second phase the pressure exerted on the curd is ended and a pressure created in the enclosure equal to atmospheric pressure. Each pressing cycle has a duration of about 30 minutes and can be repeated up to ten times according to the nature of the whey.
