The device has a sliding carrier (6) supporting the item to be cut on a flat surface which has a longitudinal guide slot (15) having its open end upwards. A rear workpiece holder (11) with a projecting handle (16) gripped from above by the user moves on a sliding plate (13). The sliding plate has a projection (14) which runs in and is retained by the shape of the guide slot. The workpiece (9) is placed between a fixed front workpiece holder (10) and the rear holder which slides along the slot so that the front and rear edges of the workpiece are held securely. The carrier is extended by sections having interlocking sockets and pins.
