Micrococcus varians bacteriocin of formula (I) is new: Gly-Ser-Gly-Val-Ile- Pro-Thr-Ile-Ser-His-Glu-Cys-His-Met-Asn-Ser-Phe-Gln-Phe-Val-Phe-Thr-Cy s-Cys-Ser (I). Also claimed are: (1) a nucleotide fragment coding for (I), esp. comprising nucleotides 88-228 or 154-228 of a defined 278 bp sequence given in the specification; (2) a M. varians signal peptide encoded by nucleotides 88-153 of the 278 bp sequence; and (3) a M. varians strain that produces (I), in particular the strains CNCM I-1586 and I-1587.
