PURPOSE: To obtain a new β-agarase having the decomposing activity of agarose and porphyran, and used for the production of oligo-sugars and the photoplast of algae cells by culturing a microorganism of Vibrio genus having the function of producing the β-agarase. CONSTITUTION: The β-agarase A decomposes agarose and porphyran, catalyzes mainly the reaction of making low molecular compound until tetroses and hexoses, not decomposes κ-carrageenan and λ-carrageenan, has 90000 molecular weight, approximately 6.6 isoelectric point, a solubility to water and an optimum pH7.5, and is stable at pH5.0-9.0. And β-agarase B decomposes agarose and porphyran, catalyzes mainly the reaction of making low molecular weight compound until diodes, not decomposes κ-carrageenan and λ-carrageenan, has 98000 molecular weight, approximately 3.4 isoelectric point, a solubility to water, 55 deg.C optimum temperature and an optimum pH6.5, and is stable at pH4.0-10.0. These enzymes are obtained by culturing a microorganism of Vibrio genus, Vibrio sp, P0-303 (FERM-P-14905). |
