PURPOSE: To inhibit the physiologically functional components included in sweet potato, particularly carotene or anthocyan from being decomposed by forced by air drying sliced sweet potatoes using dried air kept at a specific temperature. CONSTITUTION: Sweet potatoes are sliced and forced-air dried with dried air kept at a temperature ranging from 45 deg.C to 60 deg.C. The squeezed residue of sweet potatoes are also forced by air dried under similar conditions to inhibit the physilogically functional components such as carotene or anthocyan included in squeeze residues of sweet potatoes from being decomposed. Thus, dried sweet potato or dried squeeze residue of sweet potato is obtained, which is useful as a primary feedstock for food processing and industrial purposes. |
