A vacuum sensor (26) for use in devices for the vacuum packaging of perishable items. The vacuum sensor (26) senses fluid pulses (31) or flow expelled from an exhaust port (28) of a pump (22) of the vacuum packaging device. The sensor (26) converts a force of the fluid pulses (31) or flow into a signal (36) that changes with a change in the force of the fluid pulses (31) or flow. The signal (36) is then communicated to a control circuit (24) which uses the signal (36) to display (46) the progress of the vacuum process and/or shut down the pump (22) upon establishing a substantial vacuum within the package (20).
