PURPOSE: To obtain a gelling agent useful for producing a smooth and heat- resistant gel good in crispiness without causing separation of water by neutralizing an alkaline aqueous solution of a heat coagulable β-1,3-glucan with an acid before or after adding a thickening substance thereto. CONSTITUTION: An alkaline aqueous solution of a heat coagulable β-1,3-glucan such as curdlan is neutralized with an acid such as hydrochloric acid before or after adding an edible thickening substance thereto. Thereby, a gelling agent in the form of an aqueous dispersion, a solid material or a powder useful as a food material or a food additive is obtained. |
