Compsn. for stabilising a non-dairy drink, partic. a fruit- and/or vegetable-based drink contg. insoluble components, comprises a mixt. of a pectin and an alginate, in which the ratio of methylated galacturonic acid units in the pectin to guluronic acid units in the alginate is 0.30-0.70. Also claimed is the prepn. of the above drink, comprising addn. of a mixt. of pectin and alginate dissolved in an aq. medium free from calcium ions to a drink and acidification to a pH of less than 4. The ratio of methylated galacturonic acid units in to guluronic acid units is pref. 0.40-0.60. The compsn. contains no free calcium ions and is in the form of a powder or aq. soln. The alginate is sodium alginate. The compsn. opt. contains a calcium complexing agent. |
