PURPOSE: To obtain a fermentation promoter useful for lactic acid bacteria, bacteria of genus Bacillus, etc., having promoting effect on fermentation and excellent flavor at a low production cost, by hydrolyzing soybean milk in a water system in the presence of endoprotease, etc. CONSTITUTION: Soybean milk such as de-fatted soybean milk is hydrolyzed in a water system in the presence of endoprotease and exoprotease to give the objective fermentation promoter. The fermentation promoter comprises preferably 30wt.% of the whole saccharide in the dried solid content, 40-80wt.% of an oligopeptide of 2 4 amino acid chain length, <=30wt.% of free amino acids and >=0.1wt.% of calcium and/or >=1wt.% of potassium. |
