PURPOSE: To obtain a peel prevention agent of good reproducibility by washing fermented soybeans by purified water, and extracting a viscous substance mainly composed of a complex mixture of polypeptide of glutamic acid and fructose. CONSTITUTION: Approximately 180ml of purified water cooled to about 6-8 deg.C is added to approximately 50g of commercially available, gooey fermented soybeans. The soybeans are stirred for about 5-10 minutes in a manner not to break the grains, and then a viscous substance is washed out. An aqueous solution including the viscous substance is filtered through a gauze to remove grains of soybeans, which is processed by a centrifugal separator at about 20000rpm for about 60 minutes at about 8 deg.C. The supernatant is filtered by a membrane filter of a mesh diameter of about 0.45μm and sterilized. If the liquid is not used immediately after prepared, the liquid is frozen at about -20∼-80 deg.C and preserved. When the liquid is to be used, the liquid is defrosted, filtered and sterilized again. The viscous substance is pale yellow brown, transparent and a little gooey, with a specific gravity of about 1.007-1.008. The liquid is composed of polyglutamic acid and fructose and has about 7.0-7.2pH. In this manner, a peel prevention agent that can be produced with good reproducibility is obtained.
