PURPOSE: To improve the yield of crab meat after its heat treatment. CONSTITUTION: When crab is to be heated or subjected to freezing processing after heated, a yield-retaining agent made of natural rubber is added to the crab meat in order to suppress fall of the yield of the crab meat due to the heat denaturation of the proteins of the meat. After the addition, the crab meat is subjected to heat sterilization and then freezing. |
