<p>A washer (10) has a track (18) for suspending poultry carcasses (24) from shackles (16) so that an open cavity faces upward, and for moving the carcasses (24) in tandem with a rotary carousel (14). A respective water lance (26) associated with each shackle (16) and rotating with the carousel (14) is moved downwardly from a position above the cavity. An actuator responds to the presence of a carcass (24) on a shackle (16) to allow water to spray from the lance (26) and wash the carcass interior.</p>
