The process involves a mincer using three to nine straight mincing knives which are mounted at the end of its housing. The housing contains the feed-in worm which pushes the meat to be minced through the mincing section. The mincing knives have cutting angles which range from three to ninety degrees. The mincer is cooled, or is mounted in a cabinet which is cooled by a system using the Peltier effect.
