The preparing method of water soybean curd retort food (I) comprises the steps of; (1) heating the mixture of soy milk 70-90 parts, isolated soy protein 1.5-5 parts, heat-denatured egg 15-20 parts, malto dextrin or lactose 3-15 parts, gelatin or pullulan 0.5-1.2 parts at 80 degree.C, (2) adding glucono-lactone 0.1-0.5 parts to form precipitate, (3) filling into the tray and heating to get the shape, and (4) freeze-drying. (I) returns to the original state when wet with hot water. |
