<p>A composition for nut filling, which contains 1.0 to 10.0 % by weight, in total, of emulsifiers in a fat comprising 35 to 60 % by weight of 1,3-distearo-2-olein (StOSt) and having solid fat contents of 70 to 85 % at 20 °C, 50 to 75 % at 30 °C, 5 to 50 % at 35 °C and 3 % or less at 40 °C, and a nut filling containing from 5 to 25 % by weight of this composition. The use of this composition makes it possible to prepare a nut filling which is highly resistant against fat migration, has a good texture and shows a high meltability in the mouth, though it contains a large amount of a nut paste rich in low-melting fats.</p> |
