Date Jun. 24, 1993.A method of inhibiting oxidation of products containing unsaturated fatty acids and their derivatives comprises treating the unsaturated fatty acids and their derivatives with N-acylphosphatidylethanolamines. Preferred N-acylphosphatidylethanolamines are N-acetylphosphatidylethanolamine and N-oleoylphosphatidylethanolamine.
