摘要 PURPOSE: To sufficiently and quickly remove harshness from an easily available food material having the harshness, such as bamboo shoot, even from a food material having strong harshness by making the mixture solution of a reducing sugar and an amino acid adhere to the food material. CONSTITUTION: The mixture solution of a reducing sugar (preferably glucose, sucrose, lactose) and an amino acid is adhered to a food material having harshness preferably at a high temperature. The mixing weight ratio of the amino acid to the reducing sugar is preferably 1:0.5-20. The mixing solution is preferably an aqueous solution containing the amino acid and the reducing sugar in a total weight concentration of 0.1-3%. The mixture solution preferably has a pH of approximately 9.
