PURPOSE: To obtain a calcium-enriched lactic acid beverage excellent in the stability of physical properties, and to obtain a product thereof. CONSTITUTION: This calcium-enriched lactic acid beverage excellent in the stability of physical properties is obtained by homogenizing a lactic-fermented sour milk followed by incorporation with syrup and blockwise-type HM pectin 40-220 in CS value followed by incorporation with calcium. Use of the above- mentioned pectin enables further increase in the content of the calcium to be enriched in the product, and the product endurable to long-term storage with highly stabilized physical properties can be obtained with no development of precipitation, phase separation and coagulation having been considered as the problems involved in such beverages even after storage for a long period. |
