A knife set for a mincing machine, which knife set consists of a stationary hollow disc 2 and, interacting with this, a rotating knife 1 which is connected, for rotation, to a rotating spindle 4 which extends axially through a hole formed in the centre of the hollow disc 2. A seal is provided to avoid leakage of product through the central hole in the hollow disc 2 along the rotating spindle 4. The seal is in the form of a radial seal 3 mounted on a bushing-shaped central extension of the knife 1, which extends through the central hole of the hollow disc 2. In the use position, the seal 3 bears against the internal cylinder surface in the central hole in the hollow disc 2. The seal 3 can be fastened to the bushing-shaped extension on the knife 1 by means of a circumferential groove in this bushing-shaped extension and is preferably made in the form of a split ring for the purpose of easy mounting and replacement of the seal 3. In contrast to known axial seals, this seal does not give rise to leakage in connection with pulsed pressure and counterpressure and affords the possibility of a configuration in which sinews and gristle do not tend to the same extent to become wound around the spindle. <IMAGE>
