FIELD: food industry. SUBSTANCE: product is prepared by hydrolysis of squid gonads and shows the following properties: dry matter content is 30-36 wt. -%, pH is 5.0-6.0, amine nitrogen content is 0.85-1.2 wt.-%, salt - 15-16% of total product mass. Method involves the hydrolysis of squid gonads up to the content of amine nitrogen 1.2-1.5 wt.-%, neutralization to pH 5.0-6.0, evaporation up to the content of dry matter 40-36 wt.-%, keeping for at least 5 days and precipitate separation. The end product is prepared from the protein- and carbohydrate-containing raw of marine origin. EFFECT: improved quality of product. |
