PURPOSE: To obtain the composition facilitating coating on food materials, capable of giving a fry with soft, puffy feeling after cooked and also providing crisp coatings. CONSTITUTION: This mix composition for fry contains powder with the hygroscopicity at >=0.15g/cm<2> .h after left to stand for one hour in an atmosphere at 40 deg.C and 90% RH and gellability under heating. A food material prepared by coating a uncooked or half-cooked food material with this composition is cooked by frying with an oil-and-fat; or a food material prepared by coating a uncooked or half-cooked food material with this composition containing oil- and-fat is cooked by a dry heating meas. |
