PURPOSE: To obtain the subject new compound having fresh citrus-like sustained flavor characteristics with peel and sweet feeling characteristic of citrus rind and juice, thus useful as a formulation material for sustainable perfume compositions. CONSTITUTION: This new compound, a 2- or 4-methyl-2-prenyl-4-butanolide, is expressed by the formula (R1 and R2 are each H or methyl) and obtained by reaction of a 2-methyl- or 4-methyl-4-butanolide with a prenyl halide in the presence of a base (e.g. potassium t-butoxide) at 0-100 deg.C for 1-10h. The compound of the formula is incorporated at 0.001-30wt.% as a flavoring ingredient in foods/beverages, cosmetics, health and hygienic products, medicines, etc. |
