PURPOSE: To provide a sterilizer and production unit designed to enable a liquid food to be passed through at high temperatures in a short time by making the heat transfer efficiency high to effect higher sterilization effect and to prevent the aromatic ingredient of the food from vanishing along with homogenizing the fat and fiber components in the stock. CONSTITUTION: The objective sterilizer and production unit are so designed that a set of two heat transfer discs with many front-opened polygonal small heat transfer chambers aligned on the front faces against each other are concentrically superposed upon each other, and made up of heating and cooling elements where the small heat transfer chambers of one party of the discs and those of the other party are mutually deviatedly arranged so as to make them communicate with the other plural small chambers facing to one another. |
