PURPOSE: To obtain a shear-molded product of an increased taste by carrying out flash flow processing at a temp. lower than conventional one by adding fructose as a processing aid at the time of shear-molding a material including maltodextrin, etc., as a carrier. CONSTITUTION: At the time of shear-molding a material including a carrier selected from among maltodextrin and polydextrin (desirably deionized maltodextrin), fructose is added to the material as the processing aid to reduce a heat quantity necessary for forming a flash flow condition at the carrier part of the material. In addition, in order to guide the flash flow at temp 10 to 25 deg.C lower than the case of adding no fructose at the time of adding fructose, it is better to reduce the heat quantity. In addition, in order to reduce the heat quantity like that the adding quantity of fructose is desirably 25 to 50 wt.% with respect to the material. |
