PURPOSE:To obtain a food material good in palatability and nutritive value due to a residuum of a processed soybean food by mixing a powdered bean-curd refuse with a soy sauce cake and specifying the common salt concentration. CONSTITUTION:This method for producing a food material useful for a material containing dietary fibers, a soybean matured protein, a starter culture, etc., is to mix a bean-curd refuse with a soy sauce cake, improve the odor of the soy beans and regulate the common salt concentration to 1-5%. A soy sauce sediment may further be added thereto to provide a pasty form. |
