A pot (11) for heating or cooling fluid food is preferably cylindrical or rectangular in section and has side walls (11') and a base (11'') around which there are heating pipes (12) carrying a tempering fluid (14). This flows via supply and return lines (20, 21) from a cooler (13), which includes an evaporator (15), a compressor (16) and a condenser (17), and removes heat extracted from the pot by the tempering fluid. In the new arrangement, the evaporator is part of a heat exchanger (18) in indirect thermal contact with the tempering fluid side (19, 19', 19"), the circuit (12, 19, 20, 21) is completed by a circulating pump (22) and heater (23), which can be operated in alternation with the cooler. |
