An assembly generates smoke arising from a hot bed (10) to which foods are exposed for treatment and processing. The novelty is that an assembly (blower, 5; electrically heated coil 6; insulated tube, 7) directs a flow of air at the bed (10), causing wood chippings, peelings or blocks to ignite and smoke. The free end of the insulated tube (7) is positioned in ambient air.
