Complete continuous system for total utilization of the olive product comprising a cleaning module for continuous grinding of the olive, subsequently passing the paste to the mixers, which subsequently deliver it to the settler to effect a first extraction, followed by further mixing to extract the residual oil which they contain in a second centrifuging and finally the residual olive pulp and juice is dried, in which system the juice is evacuated to atmosphere in the form of water vapour while the dry product is separated into two subproducts, pulp with a high energy value and pips which are used as a fuel for self-supply for plant needs. <IMAGE>
