The invention provides a spelt noodle in which the cereal portion of the noodle is composed of between 60 and 75% by weight of spelt semolina and of wholemeal spelt flour to make up to 100% by weight. As a result it is achieved that although the noodle substantially has the appearance of conventional noodles, the essential health advantages, in particular those resulting from the semolina granularity, can be fully exploited. <IMAGE> |
