The instrument has a blade (9) with its cutting tip (10) in the shape of a semi-cylindrical gouge, and a reinforcing rib (16) to give it rigidity, extending away from the tip to form a flat strip. The blade fits into a narrow slot (8) between two flexible tongues (8a,8b) in the end of a handle (2) with a locking ring (12) engaging with a thread to lock the two tongues against the blade. The reinforcing rib fits at least partially into the slot, and one of the two tongues has a lengthwise recess to receive it. The flat strip section of the blade has an aperture to provide a grip when it is removed from the handle for sharpening. <IMAGE>
